At some point this week, I will be short on time or just dang tired. I won’t be up for chopping or sautéing or boiling and I definitely will not have time to spoon feed or argue or negotiate what’s on the plate. But I won’t feel good giving Parker a meal that is completely devoid of the nutrition his little body and mind need for school, sports or anything else either.
For these times, maybe once a week or more likely every other week, I might reach for a secret weapon that I keep hidden deep in the freezer… Nature’s Path Pumpkin Spice waffles.
This is not an invitation to load up on carbs and sugar that will turn into a blood sugar roller coaster – in fact one of my boundaries is no syrup allowed. Instead I turn this into a super charged meal that keeps P energized and his moods level for hours.
Spread 1 toasted waffle with almond butter and top with 1/2 chopped banana. These are so filling, you only need one and with the sweetness of the waffle and banana there really is no need for maple syrup.
